Question chitterlings?

Would someone explain what chitterlings are, and what to do with them? thanks!

Chitterlings are pig intestines. They must be thoroughly cleaned, like three times with fresh water. Then they are cut into pieces and cooked slowly with seasoning, vinegars, onions, garlic, hot sauce until tender. It's an old southern dish.

I saw them in the freezer section at my supermarket, and that sounds like the ingrediants I saw on the carton. Have you tried them? What is the texture like? I am a little squemish, but am willing to try something new. I think though that the label info had to be wrong, it listed 1 gr. carb, 2 gr. fiber. Hmm, if I subtract the fiber from the carb, I would have a negative carb food! If only wishing would make that true!

I don't know about the carb content of chitterlings, but I had them once a few years ago at a very reputable restaurant in Harlem --

-- that is, I ordered them, I can't say I =had= them. The smell was just short of noxious and I couldn't even swallow the second bite!

OK I'll admit it, I'm not from the South and I did not grow up with them in my diet, but they are among the most horrible things I've ever tasted in my life!

Hope you like them, but I couldn't take them at all --

If you've never had them, I wouldn't try them. I can't stand them myself and you have to be meticulous in the cleaning. It is a long and laborious process. They're also an acquired taste.

They are GUTS. Just GUTS. My sister, when living in Mississippi, MADE me eat them when I was 10. If you are someone who dislikes liver, just mulitply the experience by 10. Wuh. Gives me the willies just remembering. Smelly, slimy guts.

Ichk. OK...I need to move on from this memory....
