Question Allergies and starch substitutes...

Can you eat Wheat Gluten if you can't eat Wheat?
Also can you eat whey protein if you can't have Milk?
I see these in some recipes and I would like to know.

It is definitely the gluten in wheat that is the allergen, so other grains with gluten are no-no too.

Whey is the constituent which has the protein, and lactose, I think, once all the fat has been taken out, so once again is likely to be the culprit for allergies. But I am not so sure about that. Maybe the protein goes into the curds too.

What about ground nuts to thicken stews and sauces? And I saw a thread suggesting guar gum. (Where do you get that in its 'raw' state??)

hi Kassie,

Yes, gluten is the most allergenic protein in wheat (also rye, oats and barley) .. so that would be a definite no.

Whey protein isolate and hydrolyzed whey protein is usually ok for persons with lactose intolerance, since most of the lactose is removed during the microfiltration process. It may or may not be suitable for a person with an allergy to dairy protein. The better quality whey isolates have all the casein removed, and only lacto-protein peptides remaining ... these are more easily digested, and less allergenic.

The big canisters of whey protein are expensive, so I can understand being hesitant to buy it if you're not sure. I've seen some brands come in individual serving pouches, so you can just buy one to try it out. That might be your best bet ... then if you find you can't tolerate it, you're not out a lot o'$$$
