Default Low Carb Veggies

Hi All-

I've gone through several carb count forums and appears that there are different carb counts for veggies.

I am wondering...what are a handfull of the LOWEST carb'ed veggies?

I think iceberg lettuce is the lowest carb?

Check out www.atkins.com and go to the acceptable foods list. I believe there is a counter too

Spinach and broccoli are fairly low. I don't use iceberg it doesn't have any nutritional value. Dr. A suggest romaine. I hope this helps

Spinach, mixed greens, romaine lettuce, bok choy, alfalfa sprouts, daikon, mushrooms, arugula, endive, parsley, bok choy, escarole, peppers, celery, fennel, radicchio, chicory, jicama, radishes, chives, cucumber. They are high in phytonutrients too.

Broccoli is an excellent source of fibre too.

Like everyone else said, I stick to spinach and broccoli. I tend to overeat my veggies, more than the recommended amounts..so sticking to the very low carb veggies allows me to eat more of them.

thanks to everyone for your help! i think cauliflower has a lower carb count than broc for some reason. also, anyone have anything to say about watercress??

somebody somewhere on here said you can grate cauliflower and use it kind of like faux rice or something? Anyway, I eat TONS of mushrooms, spinach and broccoli. Its so funny, I hardly ever ate vegetables before Atkins and now I love them and use them as filler in a lot of things I cook. I use grated cabbage in stuff also. You can buy it already grated - and anything easy is the thing for me!

I was looking up some nutrient on fitday, I forget which one, anyway whatever it was, watercress had a lot of it! I suspect its quite low in carbs like all leafy greens.

Asparagus is something like 1.5 net carbs for six medium spears, with tons of fiber. Get it now, while it's in season!

i love avocado =) even tho its a fruit technically. so creamy and yum. if you guys get the chance, mix it up with some splenda- delish. its got a high carb count tho right?

An average sized avocado is 280 KCal, 12.8g Carbw and 4.13g net Carbs. Pretty high in fat so eat in moderation. But yeah, I avoided avocado like plague until I started on the lo carb a couple of months ago. Yummy!

lots of broccoli & cheese, cauliflower, green beans, mushrooms, spring onions, spinach and lettuce.

Found a great snack for entire family. Slice thin cold radishes, sprinkle with little salt and use them as chips for guacamole. Use grated eggs, parmesan cheese and cream as a sauce for spinach.

WalMart carries an asparagus stir fry thats low in carbs. Sprinkle it with olive oil and roast them, great treat. Using lots of fresh garlic now.

mad4j's I eat TONS of avacados and I don't worry about the fat. They are supposed to be really excellent for you for a lot of different reasons. I guess I've never really watched my fat since I've been low-carbing (except to see it disappearing!

I've been eating lots of red bell peppers. They crazy good sources of vitamin C and A.
