I grill firm fish (tuna, halibut, salmon, sea bass, shark, etc) on the George Foreman all the time - LC Teriyaki as a marinade - or just Oil&Vinegar - or LC BBQ sauce with Salmon -- mmm good.
crushed juniper berries as a rub gives a great flavor to fish as well. or just lightly coat with a chile or garlic flavored mayonaise - yes, really.
or grill the salmon on untreated cedar planks or shingles ... mmmm good.
