Hard Cooked Fried Eggs
I saw the idea online somewhere of cutting hard cooked eggs in half & frying them in butter - and wondered why I hadn't thought of it myself. It's a great way to use up extra hard cooked eggs. I went a bit beyond that for lunch today since it's our non-meat day.
I had some leftover red onion, so sliced it up & cooked it in butter until soft, then added a minced garlic clove, then the eggs. I served the eggs with the onion & garlic spooned over them. It was GOOD!
Since I cook a lot of veggies in butter, I'm going to try spinach & eggs - that should be good. I like Eggs Florentine, and this should be easier & just as tasty.
