YOu know, I think I would cut out the velveeta all together...monterey jack melts nice..or even plain old cheddar!
If you like the 'cheesy eggs"...lately I have been making egg crepe and filling with what I call "my gravy"...it is 1/4 cup ricotta cheese and splash of cream..salt pepper...it thins out..but thickens back up as it cools...very yummy!
