I also make up a lb. of bacon at a time. I bake it at 400 on a broiler pan for about 13 minutes and then stick it in the fridge. I love it cold with a cold boiled egg, or stick it in the microwave for a few seconds if you like it warmed up.

I made chicken rollups (with Alpenjoy cheese inside instead of the Smoked Gouda) and since I opened a package of bacon to wrap the chicken rollups in, I just threw the rest of it on the broiler pan and stuck it in the oven with the rollups to bake. Now I have a couple of meals already made (providing hubby doesn't eat all the bacon in the morning...and that is providing I don't eat it all tonight before he gets home...lol).
