Yep - Planning ahead is key. I have been spending a lot of time on my weekends preparing food for the week.
For breakfast I really like the crustless quiches - that's a week worth of breakfast. It takes just a minute to warm in the microwave and you can use whatever ingredients you like. I have been thinking about trying to make this recipe in large muffin tins to get individual servings. I'm sure they would freeze well.
The canned Atkins shakes are not bad and extremely convenient - too bad they are so expensive!
