When I first started I crammed salad greens into a measuring cup and then poured it into a bowl. Two cups mostly filled up my old whipped topping container I was using to take my lunch to work in. Add meat and dressing and my lunch was packed. After that I never measured my salad again, I can eye it and it wasn't too much greens that made us overweight in the first place.

You can really have a lot of veggies and fruits (yes, cucumber and tomato and other things on induction list are actually fruits) for your 20 carbs a day. It's the cream and the coffee and the cheese and fake foods you need to be wary off. www.fitday.com is a useful tool for figuring out how many carbs you are getting. You have to subtract your own fiber, but since it's listed under carbs at the top of the page it's pretty easy to do.
