yep...try this
200gr almond flour/ground almonds
1/2 cup coconut
1 tsp baking powder
1/2 cup splenda
2 tblsp cocoa powder
75gr melted butter
4 eggs
mix everything together (but make sure you don't tip the melted butter directly onto the eggs or they cook )
Spoon into muffin trays and bake for 15 - 20 mins at 180 C
makes about 8-10 and about 3 carbs each
They are stock std in our freezer...plus you can add other things in too...like berries.
or swap the cocoa and coconut for some nuts and mixed spice
