Default Whipped Rutabaga (aka Yellow "Turnip") Casserole - GREAT!

I found this recipe somewhere on the Net.. not specifically low carb, but awesome nonetheless. Didn't put the bacon in it and haven't calculated the carbs.. but i'm sure it's not too bad. It is reminiscent of sweet potato casserole without the marshmallows! A very subtle "sweetness". I made it with the 1 tsp of real brown sugar, out of consideration for my BF who doesn't care for the aftertaste of sweeteners, but using brown Sugar Twin will also lower the carb count.

This rutabaga recipe is sure to tempt even the most stubborn and picky eaters. The best part of the recipe is that it can be made a few days ahead and just heated up before dinner.

Prep Time: 30 minutes
Cook Time: 60 minutes
Total Time: 90 minutes


2 pounds peeled rutabaga, cut into chunks
2 tablespoons butter
1/2 cup sour cream
1 teaspoon brown sugar
salt and pepper
5 slices bacon, cooked, drained, and chopped
paprika



1. Cook the rutabaga in boiling salted water for 20-25 minutes or until very tender. Drain the rutabaga and place in a large bowl.

2. Beat the rutabaga with an electric mixer until mashed. Add the butter and sour cream and beat until the mixture is fluffy. Add the brown sugar and spices. Place the rutabaga mixture in a greased gratin dish. Sprinkle the chopped bacon over the top and dust with paprika.

3. Cover and refrigerate up to 2 days. Remove from the refrigerator two hours before serving to let warm up to room temperature. Bake the dish at 350 degrees for 20-25 minutes, or until heated through.
