Default Blow off meals.

After a month or so on a strict low-carb diet, your Thyroid will slow down. To stimulate it back into action, try adding a blow-off meal to your diet once or twice a week. (Like dinner on Saturday and Sunday) Don't go crazy with this meal, eat sensibly, but make sure you include carbs in these meals. Then go right back to your low-carb.

Be sure to plan these meals in advance as a regular part of your diet. Don't just start eating carbs and then call it your blow off meal. And don't use your blow off meal as an excuse to binge on all your old favorite foods. Otherwise, before you know it, you will be completely off the diet.
