Tried the frying with sliced yam or sweet potato. Don't bother. Unlike plantains they didn't come out crisp, but soggy. Same oil, even hotter temp and longer cooking time. Commercial sweet potato 'fries' are coated with starch and sugars to make em crisp up when deep fried or baked still frozen.
Plantain fries soon will get like a cold French fry if not served straight away
Perhaps all these test failures will make for some good dog treats? ^..^
My "Judees" potato starch was a huge bag 2.5 lb It mixes well with water, and has a hint of raw potato taste going down. No ill effects from it so far. Likely is feeding the kefir in my gut right now!
