I handle situations like that pretty much the way you're doing. I make a meat and veggie that are low carb and maybe add one or two higher carb side-dishes for the guests. Often, my guests prefer my low carb dishes to the higher ones, such as my buffalo wings or mock potato salad (made with blanched cauliflower) or my broccoli salad with bacon, cheddar cheese and red onion .
Come to think of it, the last time we had dinner guests I put rolls on the table, but nobody touched them. They kept going back for more of the main dish and veggies.
