I have to agree w/ Kristine, your mom might be feeling threatened. If she doesn't feel at a point to give up the foods that are damaging to her diabeties she could be subconciously sabatoging you (only a suggestion, not definately a fact). I have to say that at your age (and I do realize how busy going to school can be, especially if your working also) it might be just about time to start cooking for yourself. If you're relying on someone who doesn't get your WOE to make all your meals, it will only be an uphill battle. Maybe think about pre-cooking and chopping/preparing foods on one day a week that's good for you so you have those things on hand throughout the week.

I do understand where you're comming from. My DH doesn't do LC and I have to make meals to feed both our eating styles. It's a pain to have to deviate from the norm but if you're serious about changing your lifestyle, it has to be done. Good luck!!
