Why don't you post a typical day's menu so we can see where you're at. Sounds like to few calories to me....
Other ideas in the meantime; eat some avacado or walnuts. That will add some fat and calories to your diet, but hardly any carbs. Plus, they are good fats. The walnuts also have Omega-3s which are crucial to good health.
