Question Kidney donor looking for info

Two years ago I gave my Father a kidney. They told me the only nutritional restriction was not to have too much protein. The result has been increased carb consumption and 20 pounds gained. I'm looking for anyone out there who has used a low-carb diet or knows someone who has used a low-carb diet when they have only one kidney. I can't seem to get a straight or consistent answer about the risks vs. the risks of excess weight (6'4"/265 now). I have been overweight my whole life and really want a solution. If there is a way to do the diet while being monitored for renal function I would be happy to do that too. Thanks for any info you can provide.
