Default Cauliflower Cheese soup

This tastes a lot like potato soup with cheese, honest! Even my kids love this one; it's hearty, warming and filling. Just perfect for a cold winter day.

1 head cauliflower, cut in flowerets
3 cups chicken broth
6 slices bacon, diced
1/2 cup chopped onion
2 celery stalks, sliced
1 clove garlic, minced
8 oz. sharp cheddar cheese, grated
3/4 cup heavy cream
salt and pepper to taste

Fry bacon in bottom of soup kettle until nearly done. Add onion and celery and saute until just beginning to soften. Add chicken both, garlic and cauliflower; bring to a boil. Reduce heat and simmer until cauliflower is very soft. Remove from stove and puree in food processor, in small batches if necessary, and return to pan. Add cream and shredded cheese. Simmer just until cheese melts. Season with salt and pepper to taste.

35 grams of carb for the whole batch and will serve 6, so roughly 6 grams of carb per serving.
