I agree, you definitely need more veggies! If you don't care for salads, try some cooked spinach/cabbage/eggplant/broccoli/cauliflower/asparagus for dinner, 1 to 2 cups would be plenty, and add some butter or oil to it. That will give you more calories and carbs. (but GOOD carbs) If you hate cooked veggies, try some raw veggies with a full fat sour cream dip. Yummmm.
