Question Eggplant Parmesan

I want to make eggplant parmesan and need some ggod advise/ a good recipe. How can I bread the eggplant so that it crisps without using soy flour, the flavor of which I find to be, so far, overpowering. Any ideas? Does a couple of tablespoons of white flour really make the world end? LOL
