Hi Chloe and welcome!

I agree with everyone above. Low carb does not mean NO carb, even if you are a diabetic. You need those veggies. Have you had a chance to visit our diabetes forum yet? Lots of information there.
If you don't have it already, I'd also like to encourage you to pick up a copy of Dr. Bernstein's Diabetes Solution diet. It's written by a doctor who is a type 1 diabetic like yourself and is low carb specifically for diabetics. There is a LOT of very good information in there and he addresses some problems that are specific to diabetic low carbers. I put it on my "must read" list for any diabetic, whether newly diagnosed or having lived with the disease for many years.
You're wise to keep to a similar meal plan until you know how this is going to affect your blood sugars. Keep a close eye on your blood sugars as they are sure to come down quite a bit with a big reduction in carbs; you don't want to wind up with a hypo episode.
And last..work closely with your doctor on this; dosages and even types of insulin may need to be adjusted and sooner than you might think.
