I think you would do well on South Beach. It is more lenient with carbs than Atkins, and more veg friendly in general.
Here are some samples of meals that would fit the guidelines for induction:
1. an omelet with loads of veggies
2. cottage cheese with chopped tomato or cucumber
3. unsweetened, FF yogurt or greek yogurt- could add nuts is desired
4. stew made with veggies and beans- or could do a vegetarian chili with quorn or soy, if you eat those things
5. vegetable/ tempeh stirfry
