Well, this is my second year of growing spaghetti squash and they are a huge success. The first year I grew in excess of 40 and they lasted right throughout the year, except for the ones we ate!
They are doing well again this year.
I came across someone talking about zucchini candy on Facebook and looked it up and tonight I made spaghetti squash candy as I think that it is more the right density needed.
I substituted xylitol for sugar in the syrup, added the juice of two limes, cooked the squash intil just slightly softened and the vegetable was permeated with the syrup, drained it the dried it in a low oven for some hours.
What a great sweet treat that is all vegetable.
