Personally, I don't enjoy eating the skin and rind. Ever since I was a kid. Furthermore, if you are eating conventional meats (as opposed to organic), the toxins get stored in the fat (and liver). Not an issue for most people though.

I don't think it's a big issue as long as you make sure you are eating enough fat. You will need to be a little more diligent about adding fat into your foods. Log your food onto fitday.com and make sure you are getting about approx 65-75% fat. You'll need a scale though. The best gift for myself was a digital postal scale (from Business Depot). It made life so much easier.
