Chicken wings are one of my absolute favorite things, and the lack of a breading was a stumper, until I came up with a 1/2 and 1/2 mixture of textured soy protein and grated parmesan (watch out for store brands of grated parmesan; some of them have flour or other wheat as a binder/filler). Works like a charm!
If anyone's interested:
Wing Breading:

3/4 C. textured soy protein
3/4 C. grated parmesan cheese
1 T. paprika
1 t. dry mustard
1 t. onion powder
1/2 t. cayenne powder
Wing Sauce:
=========
1/2 C. cayenne sauce (I like Red Hot)
1/4 C. white vinegar
2 T. melted butter
1/2 T. paprika
1/2 t. black pepper
1/2 t. dry mustard
Prepare wing sections with breading and cook as you normally would. I bake them at 450 for about 40 minutes, turning once, on a cookie sheet with about 2 T. melted butter on it. Warm the sauce and toss the cooked wings in it until the sauce thickens. Enjoy.
