Arnie,

You are right that you need to watch out with pepperoni and sausages and you do need to count any carbs. I really read labels closely and just just the ingredients. I have had to get good at math. I multiply the fat and the protien calories to see if the carb count is really correct.

I usually buy Boarshead Salami. The reason: because at Publix (the grocery store i go to) has a complete booklet of nutritional information on the meats. This way I know what I am getting.

Now that I have been on the program a while, I personally have to watch the calorie creep up on salami.

I will tell you this.. When you are starving because you had a long day at work, nothing is better than a slice or two of salami when you are making dinner. It is like having an antipasto!
