I can see by your posts that you've done some research. I'd like to recommend a book to you. Sugar Blues by William Dufty. It was an eye-opener for me. You asked why carbs do this. I think his book contains part of the answer.

Also, if you use Morton salt, you may want to consider buying an alternative. It contains sugar (dextrose).
