Default LC Cheesecake

Base:
4 oz crushed nuts (peacans or walnuts)
1 tsp cinnamon
1 tsp. splenda
about 2 tsp. butter

Cheesecake:
1 lb. cream cheese
2 eggs, separated
6 tsp. splenda 1/2 tsp. vanilla
finely grated rind and juice of one lemon or lime

Preheat oven to 300 df. Butter a 7 to 8 inch round layer cake pan. Place all the base ingrediants in a bowl and microwave until the butter has melted (about 30 seconds). Stir and spread over the base of the cake pan. Put the egg yolks, cream cheese, sweetner, vanilla extract, lemon rind, and lemon juice into a bowl and beat until light and creamy. Beat the egg whites until stiff and fold into the cheese mixture. Pour over crust in cake tin. Bake in the oven for 45 minutes. Leave cheesecake to cool about 15 minutes. I get these refrigerated strawberries from the grocery store and pour them on top for a treat, but I like it plain too. I find them in the fruit section in a plastic bowl.
