You could just season them and fry them without any coating at all, although I would probably thaw the chicken first, but if some type of breading is required, try crushed pork rinds. First dip the chicken in a mixture of cream and egg white, then roll in the crushed pork rinds and you'll probably get some of the best fried chicken you've ever tasted. I've also seen people mix parmesan cheese in with the crushed pork rinds.
