I bought Nitrate free bacon at Trader Joe's. I think it was the Applegate brand, but I'm not sure. Since it's so expensive, I just use it as an occassional treat.

I take a whole package of bacon and package it into two slice packages. I roll up two slices, put it in a baggie, then another two slices, roll 'em up, bag it, etc. That way, I just grab a two-slice package when I need it and defrost.
