One of the true JOYS of this way of eating... is roasted chicken thighs... lots of fat and wonderful CRISPY SKIN!!! On my previous low fat, calorie restricted diet... I was getting to where I HATED chicken ... as I had it often... but it was always boneless, skinless, breasts. Heaven forbid if I should eat the dark meat which has a much higher fat content! LOL!
I thank my lucky stars that I finally looked into this and learned what I did last year. 2002 was a good year for me... I became a low carber... and started having a much healthier relationship with food.
