Thumbs up Southwest Chicken in Cream Sauce

This is a good one guys. I made it last night and the smell wafting through the house as it was cooking was making my mouth water. I was not disappointed either! Yum!


Ingredients
4 boneless, skinless chicken breast halves
3/4 teaspoon salt, divided
1/8 teaspoon freshly ground black pepper
2 tablespoons olive oil, divided
1 cup chopped red bell pepper
2 teaspoons minced jalapeno chile
1/2 teaspoon ground cinnamon
1/2 teaspoon chili powder
3/4 cup chicken broth
2/3 cup heavy or whipping cream
1 tablespoon fresh lime juice
2 tablespoons chopped fresh cilantro



Directions
1. Sprinkle chicken with 1/2 teaspoon of the salt and the black pepper. Heat 1 tablespoon of the oil in large nonstick skillet over medium-high heat. Brown chicken, 4 minutes per side; transfer to plate.

2. Heat remaining 1 tablespoon oil. Add bell pepper and jalapeno; cook 3 minutes or until peppers are tender. Stir in cinnamon and chili powder; cook 20 seconds.

3. Stir in broth, cream and remaining 1/4 teaspoon salt. Return chicken to skillet; simmer 8 to 10 minutes or until chicken is cooked through. Remove from heat; stir in lime juice and sprinkle with cilantro. Makes 4 servings.
