What about letting it sit on the counter until cool but not set and adjusting it to taste? Add a few drops of lemon juice, more stevia or more syrup until it tastes just right?
One of the things I swear by is high quality extracts. The brand I use is Boyajian and they are usually available at "gourmet" food stores.
