Pork rinds are great for those who suffer chip withdrawal. I love chips and pretzels, anything salty and crunchy, expecially after a bowl of ice cream, just kidding. Found many ways to use pork rinds, the plan kind and bbq. Watch out for the hot & spicy unless you really want hot & spicy. Tonight I crushed up a bunch of the plain and used them instead of bread crumbs in meatloaf. Tuesday I'm making shrimp scampi and will crush some more for a lite topping. This really grosses my kids out but when I'm going nuts for chips and dip, I'll dip the bbq kind in potted meat, even used them for a tuna dip this week. The list is endless. My next adventure is to try them with butter, splenda and cinnamon.
