I'm already seeing the stores beginning to change, and it's great! The Hannaford near me recently renovated a whole section of their store geared towards healthier foods. They used to just have one isle. They now carry low carb bread of all sorts, all kind of vegetarian and organic frozen foods, they even have flax waffles (still too carby for me though). They even have refrigerated flax seed oil capsules in light blocked bottles. It makes it easier to shop and hopefully we'll see prices drop as low carbing becomes more popular and accepted.
