I keep a head of chopped lettuce in a big zip lock...my favorite kitchen helper...and for lunch I grab a couple of handfuls, topped with whatever else is in there: lunch meat, scoop of tuna, egg salad, leftover dinner... or I just bring some dressing and buy a quick $1 burger without the bun.
Breakfast for me is eggs and something...same thing...I start with the eggs, and use up leftover veggies for mixing in, top it with cheese or something and go. If the cooking is a problem, make a giant crustless quiche and freeze individual slices.
