You may want to take a look at a Glycemic Index to find the best choices of veggies and fruits.
The lower the GI number, the less that food will have on triggering your insulin. I have found berries and some of the tarter less sweet apples do the trick.
The more sugary the veggie or fruit, the more impact it will have on triggering insulin and your carb cravings. My personal favorite snack at this point is sliced apples with natural peanutbutter.
