Tofu can be pretty low in carbs, depending on the brand.
So Soya is a product you might want to try - it's soy based "chicken" type slices, but they smell and taste very plain. Shouldn't make you ill. They're sold dry, and you cook them in broth or water and usually add sauce to them.
