Cool Hashbrowns/eggs/bacon (or ham) - Induction Friendly!!

This is sooo delicious! My hubby and I are in induction right now and were bored w/the basics, so we started playing with lots of different "induction" foods and mixing them together.

Ingredients:
2-3 eggs (We use more when we're really hungry since they have less carbs)
1 cup sliced radishes
3-5 pieces of bacon or ham
onion powder, garlic powder, parsley, salt/pepper to taste (All optional)
Carbs: Since cooked radishes seem to have a few more carbs then raw ones, you're looking at approx. 6 Total Carbs. Add additional one to accomodate garlic/onion powder if used.

Instructions:

Cook Bacon or Ham (We prefer to just microwave precooked bacon)

Slice up 8-10 radishes keeping in mind that the smaller they are, the quicker they will cook (We have a mini food processor that works great for this)

Drop the radishes & either real butter or olive oil into a skillet and let them start cooking for a minute.

Add your cooked bacon and 2 eggs and seasonings to the mixture. Stir around in the pan so that the eggs become more like scrambled eggs. (Be careful not to oversalt, we found that it needed very little with the bacon)

Let cook about 5 minutes and then enjoy! It's going to make quite a big bowl full, so feel free to cut back a little on the radishes if you prefer!
