Hi there HB & welcome. If you have just started, you are limited to 3 - 4 ounces of full fat cheeses like cheddar, Gouda, Swiss, mozzarella, blue cheeses or cream cheese.

Stay away from low fat or diet cheeses and do not use the slices of 'processed cheese' like Velveeta. (If you would melt it on a cheeseburger, don't have it. Cut up some real Cheddar instead.) Also, do not use cheese spreads like Cheez Whiz.

How much is an ounce of cheese? If you buy a block of 8 ounces of cheddar, then cut it into four pieces and then cut one of those in half. That's an ounce. Weigh it in your hand. Most of the other cheeses will be the same sort of size. I just looked in my frig and it seems to be a square of 1 inch by 1 inch and about 1/2 an inch thick.
