Have you read the 2002 (white cover) book? It really does help to read the latest information available.
In it, there is nothing about cheese being free. On page 125 in "Other Foods Acceptable During Induction" he says to have 3 to 4oz daily.
And on page 190, in the "How to get past a plateau" section, he says "Don't go whole hog on the cheese and nuts."
And to hark back to the 20g carbs during Induction (no mention of 15g!) remember that you can subtract fibre carbs, leaving quite a lot of vegies available. I've found that I can actually have up to 6 or 7 cups and still be under 20g!
