Insulin is one the most important contributing factors to building muscle- a low carb diet (i.e. the 'Anabolic Diet') means low levels of insulin (present)... which is not good (for building muscle). However, if your only concern is getting your thyroid levels up to par... I don't see why the weekend carb-load hasn't helped with this problem. Anyways, if building muscle isn't your main priority at this point... you could give the Anabolic Diet a try to up-regulate your thyroid. If building muscle is a priority... utilize a higher carb diet to help with your thyroid/muscle mass gains.
