IMHO,
I would suggest you read through Protein Power. I keep a copy at my office and also at home. It is a great reference that I use over and over again.
I haven't read Living Low Carb. I don't know if that book gets into the physiology of low carb, but you should really get to know the nuts and bolts of the WOE and then modify to what works for you.
