Try to stay away from "processed cheese" or "cheese food". (I can't believe that last label.) Both contain so many additives that the carb count goes up. Avoid Velveeta, CheezWiz- type of spreads and those slices that come individually wrapped.

Do NOT buy the "lite" or "fat reduced" cheeses. Not only are they mostly processed, but their carb count is much higher.

Fresh cheeses are usually the soft ones: cream cheese, cottage cheese, quark, ricotta, mascarpone

Aged cheeses: these are harder (Cheddar) or have a rind (Brie, Camembert).

For the Atkins Induction, stay with the hard, solid ones: Cheddar, American (but not processed) Cheshire, Wensleydale.

It is very usual, normal and common not to lose on the week after Induction. Your body is adjusting to lots of change in its fuel and the way it produces energy. It is also using the rich new supply of protein to make repairs to muscles and organs. The body is still not sure that the food will keep coming, so it may hold onto things for a while. Fat cells do not seem to like losing fat, so they suck up water to try to plump themselves up again. Keep with the plan, and the water will go along with the fat and the inches will go as well.
