Mine is really similar to the recipe posted. I do not use the baking powder. And I beat the eggs really good and then stir in the rest of the ingredients (including the meat) before putting it in the muffin tins.

One Tip......it is well worth buying the foil baking liners (I think I bought a whole pack at Walmart for .98) and then spray lightly with olive oil. It makes clean up a breeze!!!
