I realized that there is so much focus on foods, that another vital element in successful cooking is being ignored.

My experience has been that cooking is made a pleasure if the right tools are being used.

I love to cook and love good quality products that truly make a difference.

I have been doing research for the past couple of years on pots and pans. The best ones I have found are made by a German company called Gastrolux. (in Canada www.titan-2001.com)
I have bought a couple and have put them through the paces. They are fantastic. I can cook without oil and with oil. I can crank the heat up to unbelievable levels and blast them with cold water and they don't even shiver. The heat distribution is better than anything I have seen. They are ceramic coated so there is no gassing that is said to happen with teflon, and you can use steel tools without worry.

There is always a catch though. You have to keep them clean. It is recommended that you rinse them out while they are still warm, which means no throwing them in the sink and going to the table. Still this works for me , since most of my cooking is classical which calls for resting periods etc.

There are imitations out there, and they have not been able to match these. (Once again you get what you pay for)

One other note. I have a ceramic top stove. The bases fit the cooking areas perfectly and the flat machined bottoms mean no pot spinning that happens with lower quality or warped pots.

Now that I have torture tested the three pans I have, I am going to start adding to my collection.
