I love corned beef for cooking this is fabulous... I would never go back to using potatoes when I tried the veg topping.

Cornedbeef Cottage Pie

Ingredients:
Tin of corned beef
1/2 onion (Optional)
1/2 Green or red pepper (Optional)
Tbl sp oil

Cauliflower/Turnip mash
Grated Cheese
Butter
Fresh cream

Fry onion and pepper in oil add corned beef and fry until moist. Place in oven proof dish, top with a mix of cauli and turnip mashed with butter and fresh cream to taste. Cover with grated cheese bake in moderate oven 10/15 minutes until cheese is golden. Enjoy....

Can use tinned Chunky Steak in place of corned beef low in carbs too!
