I can't get nitrate free bacon here in Ireland so I have to be honest, I do eat the nitrate stuff.
However, I think that the type of bacon we have here in Ireland is leaner than the USA type so it's probably OK.
I only eat it about twice a week anyway.
A big supermarket chain here make their own sausages and they don't use nitrates so they are fantastic. I asked this supermarket why they don't ofer nitrate free rashers, and they said they never heard of such a thing!!!
