Some people may find that they need to follow a lower version of low carb (lower, not low) following a gallbladder removal, but it hasn't caused me a bit of trouble. I had my gallbladder removed 10 years ago and eat all the fat I want (65-70% of my calories from fat) and it doesn't bother me at all. Of course, I also eat plenty of fresh veggies for the fiber. Interestingly enough, I developed gallstones before I had children and after following a low fat diet.
