I am a newbie so bear with me! Dr. S says we can eat as many non starchy veggies as we want and count them as zero carbs, because the amounts are insignificant and they are low on the glycemic index.

The only counting of anything you have to do is watch your carb amounts at each meal and snack! That's it, pretty easy huh!
